Chocolate chip cookie dough ice pop

Ingredients
  • 1 cup of cashews soaked the the before
  • 1 can of coconut cream or the firm part of coconut milk refrigerated the day before
  • 2 tbsp of maple syrup
  • 2 tbsp of vanilla extract
  • 1/2 cup of nim-nums cut in pieces
  • Chocolate coating:
  • 5 oz of dark or milk chocolate
  • 1/2 tbsp of coconut oil

Step 1

Put all the ingredients except the nim-nums in the blender until creamy

Step 2

Pour the mixture into silicone popsicle molds and push in a wooden stick for each pop.

Step 3

Distribute the pieces of nim nums in each pops.

Step 4

Refrigerate for 2 hours in the freezer.

Step 5 - Coating chocolate

Place chocolate and oil in a 4-cup microwave-safe glass measuring cup and melt chocolate 30 seconds at a time until melted.

Step 6

Quickly dip the ice pops in the chocolate and garnish with pieces of white or dark chocolate or your choice of topping.

Step 7

Place back in the freezer until ready to serve.
